Quinoa Cakes with Beet Chips

With Fall upon us in full force, I've been diving into rich, Indian spices for a lot of my meals. Curry has become a big favourite, especially because I can make it without the heat for my dear pansy mouth. Curry mixed with coconut is exceptionally fantastic as well. (Stay tuned for a feature in November that makes awesome coconut curry kits :)) Along with curry, I've been loving the cumin. This recipe shines cumin and is subtle, yet prevalent. You'll just have to try it out to see for yourself.

This day, I thought I would try something fun and different. I found the recipe for the quinoa cakes on http://www.fortheloveoffoodblog.com/ and you can see the actual recipe here. I omitted the spicy corn relish as I didn't have any fresh corn at the time, but I think I'll try it out next time (making it a mild corn relish of course), as we will definitely be having these again. I even made them as an appetizer for a friend's birthday party and I had none left to bring home. I think that was a good sign. :)

I, of course, have everything also posted below, but sometimes people like to see where a recipe originated from. I know I do. I'm hoping to one day get creative and start inventing my own dishes. I know I'll get there, but to get my feet wet, it's always nice to follow in the footsteps of those who know what they're doing when it comes to healthy eats.

I'll be able to make so many more delicious recipes for you once I finally have my very own food processor. It's on my wish list, now just to continue being patient. I have my eye on the Kitchen-Aid 7 Cup Elite Slice food processor. Any comments on this one if you have or have used it? Do you have any suggestions or recommendations of a better one? Please share any information you may have? I'm a sponge! :D

Ok, now, without further ado, I give you today's most delicious meal:

QUINOA CAKES WITH BEET CHIPS (gluten-free, dairy-free, can be made vegan)

Quinoa Cakes

Ingredients:
makes 12 quinoa cakes

1 cup quinoa, cooked and then cooled
sea salt and pepper to taste
1/4 tsp paprika
1 tsp cumin
1/2 cup spinach, chopped
1/2 tsp garlic powder
3 eggs (use an egg replacer to make this recipe vegan)

Directions:

-Preheat oven to 350 degrees
-Mix cold quinoa with paprika, cumin, spinach, garlic powder, and salt and pepper to taste. Add eggs, or egg replacer, and mix together.
-Add 1/4 cup of the quinoa mixture to each muffin cup. Press down a little on the top so it is flat and even.*
-Cook for about 20-30 minutes, until the tops are just turning brown and cakes are fully formed. Remove from oven, cool, and then flip the muffin tin over onto a baking sheet. 

*Both times I've made this recipe, I've had trouble getting my cakes out of the muffin tin. I tried without spraying and with spraying beforehand, and it made no difference. We were even using a non-stick pan. We used a plastic spoon to carefully loosen the edges of the cakes and scoop out onto a plate.

My husband made a spicy, mustard dip for these cakes and they were a hit. I used some tamari sauce, or soy sauce, and I enjoyed them like that.

 Slice beats. For best results use a mandoline slicer or food processor that slices for even slices. I used a knife and it was quite difficult.

Coat with olive oil and lay out on a baking sheet or stone. 

 Bake, sprinkle with salt and enjoy!
Beet Chips

Ingredients:

3-4 medium beets (or 6-8 small beets), peeled and sliced thinly. Use a mandoline slicer for best results, and it's easiest!
1 Tbsp olive oil
Sea Salt to taste
Any other additional seasonings you may like to try

Directions:

-Preheat the oven to 350 degrees.
-Toss the beet slices with oil in a medium sized bowl until they are all well coated.
-Lay them flat in a single-layer on a rimmed baking sheet (bake in multiple batches if necessary).
-Bake for approx 20-30 minutes, until chips are crispy. Check after about 15 minutes, since the time will vary based on thickness of chips and how dark your baking pan is.
-Sprinkle a little sea salt (unprocessed) over the top when you take them out.
-Transfer to a wire rack and they will crisp up a bit more as they cool.

Chickpea and Sweet Potato Burritos

There are some days that you just don't want to turn the oven on to cook a meal. Even though I'm home with my little girl, supper time comes quickly and with it, the stress of "what should I make?!?" I've tried to ease this stress by coming up with a weekly meal plan, which has been extremely helpful and reduced an element of chaos in my life. As I've gotten older I've certainly desired organization in my life. When I have a cleaning and cooking plan for my week laid out, I feel like I can do anything and it's not too much. Anyone out there get where I'm coming from? I definitely still have a long way to go in order to bring order to our home, but little by little I'm getting there. It always feels good when I get something done.

Thus, in my search for meals last week, I went to one of my favourite blog sites http://www.healthfulpursuit.com/, to see what ideas I could find. As usual, I was not disappointed.

The following recipe was a glorious discovery and simply delicious, not to mention easy. You can go to the original post here, but I have the details below as well. Forgive the horrible pictures. My camera is being cranky as of late, thus all my pics are not up to par, nor have they been for quite some time. A new lens is on the wishlist :)

CHICKPEA AND SWEET POTATO BURRITOS

Nom nom nom

Ingredients:

1 Tbsp extra-virgin coconut oil (I used grapeseed oil as I didn't have coconut oil)
1 medium sweet potato, diced
1/2 yellow onion, sliced
4 sprigs fresh rosemary (I wasn't able to find any, so I used fresh basil and it was awesome!)
1/4 tsp Himalayan rock salt (I used Celtic sea salt)
2 cups cooked chickpeas *
2 Tbsp sun dried tomatoes**
Toppings of choice: chopped romaine, fresh tomatoes, avocado, spinach
gluten-free brown rice tortillas

*I recommend buying dry, bulk chickpeas. You will need to soak them overnight in water the night before you wish to make this recipe, so be sure to plan ahead. Then cook your chickpeas a couple hours before you wish to make supper, so they're ready to go.

**Be sure to blanch the tomatoes first. Follow package instructions

Directions:

- Melt coconut oil (or whatever oil you choose to use) in a large cast iron pan on medium heat. (I used my big Pampered Chef pan and it worked great.) Add sweet potatoes, onion, rosemary (or basil) and salt, cover and cook for 10 minutes. Add remaining ingredients and cook until heated through.

- Remove from heat and add bean filling to tortilla along with desired toppings. Wrap and serve.

- Leftover filling can be reheated the next day for lunch in a wrap, as a salad topper, or mixed in with some leftover rice.

Gluten Free Pasta with Zucchini and Lentils

I'm so thankful that I live in a time where gluten free is really not a big deal. There are so many options available, that those of us who either choose to be, or need to be, gluten free, can still feel like we are able to partake in delicious meals that include breads and pasta. This meal is no exception. I bought some brown rice pasta for this simple, but yummy dish.


I found this recipe on a blog called For the Love of Food. It's a fantastic blog filled with delicious recipes that I encourage you to check out and try it. Today's recipe can be found here, but I'll also post the details below :D I can't take any credit for this recipe, but am so thankful I found it. My husband and I both enjoyed this meal, and it will appear again on my menu, you can be sure of that.

GLUTEN FREE ZUCCHINI AND LENTIL PASTA


Ingredients:

1 cup of organic lentils
2 cups water
4 medium zucchini, diced
1 small yellow onion (or half a medium onion), diced
2 cloves garlic, minced
1 Tbsp coconut oil (or another oil for high-heat)
1 pound pasta (Quinoa, brown rice, etc)
Juice from 1 lemon
Extra virgin olive oil
Freshly-ground black pepper and sea salt to taste


Directions:

Preheat oven to 450 degrees

Add lentils and water to a medium pot. Bring to a boil and then lower to a simmer and let cook until lentils are tender and liquid is evaporated, about 30 minutes. Set aside.

Meanwhile, toss zucchini with onions, garlic, and oil and lay flat in a single layer on a sheet pan. Roast for 15 minutes, turning at least once, until zucchini is tender and golden brown. Remove from oven and set aside.

While lentils and zucchini are cooking, boil water for pasta and cook according to directions. Toss lentils, zucchini and pasta together with lemon juice. Drizzle with olive oil and top with black pepper and salt to taste. Serve warm.

Monday Feature: The Salt Cellar

Another Thanksgiving has come and gone. A time spent with family and a time to reflect on the last year and remember all the ways in which we have been richly blessed. This past year we were blessed with a newer place to live, a healthy, beautiful daughter, and continued provision and health, just to name a few. We are truly thankful.

Thanksgiving is also a great time to partake in some delicious food. Many of us over-partake, but so far this year, I've been pretty good at keeping myself in check, yet still enjoying the festivities. My husbands family, being from Trinadad, keep Thanksgiving unique and fun with food items such as curried chicken, roti, and a soup like mixture containing pig knuckles (which I couldn't bring myself to try), as the main staples of dinner, instead of a huge turkey. Thanks to my one Auntie's boyfriend, we also had curried moose! It was delicious :)

As many of you know, I've been doing a lot of fun cooking and baking myself as of late. I'm loving the experimenting and discovery of new and fresh flavours. It's not been without it's bumps, of course, as not everything turns out to perfection, but practice makes perfect.

Along with this new found love of cooking, my husband and I have also begun to traverse down a new road of eating habits and taken healthy eating to a whole new level. I mention this, because today's feature fits right into this newly adapted lifestyle and also goes hand in hand with all my cooking exploits.

Salt.


Without this glorious, delicate, yet simple, spice, most food would be rendered bland and unappealing. Most reach for the closest salt at hand, iodized table salt, which is one of the worst salts you could put into your body. It's kiln dried, highly processed, and a toxic to our bodies. Rather, we should only be using the purest form of salt, sea salt. But not just any sea salt (as some store bought sea salt is also processed and kiln dried, losing all it's good minerals), sea salt that is dried of the wind and sun. These salts have all their natural minerals intact and aid in a healthy diet (used in moderation of course). Himalayan and Celtic are two of the best Sea Salts, and thankfully, today's featured business, The Salt Cellar, carries both, among a plethora of other fantastic, high-quality sea salts!


The Salt Cellar has a quote which says it all: "Salt is born of the purest parents: the sun and the sea" ~ Pythagoras (580 BC - 500 BC) So true.

I came across The Salt Cellar while perusing the Millarville Farmers Market. I was drawn in to the booth, and there before me was an array of pure sea salt, infused with such flavours as lemon twist, black truffle, garlic and spicy habanero, just to name a few. I was intrigued. I sampled several of the flavours and was astounded at their delicate and perfect balance of flavour. Since that day, I've had the pleasure of bringing several different flavours into our home and have used them in an array of cooking. It's brought out delicious notes in my food that I would have never, otherwise, discovered. For instance, some of the garlic infused sea salt on raw avocado brings out a lovely, smokey flavour that was divine!

Owner and creator of The Salt Cellar is Virginia Marion, a friendly woman who knows her stuff when it comes to salt. Virginia does some blending herself, and it doesn't take a genius to see that, she herself, is a genius.


Virginia's childhood played a role in her decision to pursue this business. She recalls, "Growing up in Montreal, antiques were always a part of my life. My mum and dad had a beautiful antique store and in it were many objects of interest including salt cellars. We always had salt on the table in pretty containers, but they did not contain the more colorful and healthy salts that are becoming more prominent today".

As the years passed, Virginia's interest evolved into the culinary field, which eventually led her to the George Brown College in Toronto. "I apprenticed in many restaurants, learning the skills needed to create a great meal. I spent 5 years as the owner/operator of my own restaurant, where I had a free hand to create and modify recipes."

Virginia soon discovered that her talents extended beyond just cooking in the kitchen and she knew she needed to teach others. Virginia proceeded to earn her teaching degree and then taught the culinary arts at the high school level for many years. "My desire to educate continues to grow, by sharing my passion and knowledge of food and incorporating healthier components into every bite."

Virginia was just in the beginning stages of starting up her business when she had a serious car accident that laid her up for the better part of a year. During that time, however, she was able to begin researching packaging and build her website.
"Packaging is very important to me. As with food, the eye sees first and then comes the pleasure. I have worked extremely hard despite my numerous injuries, and I hope to be an inspiration to my children. I am not in a hurry to grow my business because I like the personal touch and I am proud of the fact that I stay in contact with my customers and ensure they have what they need. Quality before anything else."


Virginia does hope to expand further into Alberta and then, perhaps Saskatchewan and Manitoba. Then more people will be privilaged to partake in her most enjoyable and complimentary salts. The Salt Cellar is sure to have a flavour to tantilize the palates of everyone. Announcing Medicine Hat's first ever WINTER FARMERS MARKET!

I love the farmers market. It's one of those things that I look forward to every Spring and am so sad to see end come Fall. I look to larger centre's, such as Calgary, who have a plethora of indoor markets that continue year round, with just a fragment of tainted jealousy. Medicine Hat has no such place during the cold, winter months.

That is until this year!

For the first time ever, a winter farmers market is on the table for those of us in Medicine Hat and area! Its so exciting, because now we have a place we can go to get some good, home baked goods, local greenhouse veggies, delicious meats and fabulous other products, the whole year through!

The winter Farmers Market is scheduled to kick-off October 18th from 4pm-8pm and will be held in the grand stand building at the stampede grounds. It will continue every Thursday thereafter at the same time. I have had the honour of being asked to be the market manager, which is so exciting considering my passion for supporting local. I really would love to see this market succeed, but in order for this to happen, we need YOU to come out and show your support and purchase product from your local businesses and farms the winter through!

Homemade Clam Chowder

I don't know about you, but I'm feeling extra chilly today. Yesterday was crisp, but not as chilly. Today, however, there have been rumours of snow (and the white stuff has actually fallen in other parts of Alberta already). Personally, I'm not quite ready for snow. I love the Fall. It's my favourite season with it's colours of beauty, crunchy leaves underfoot, and subtle smells that bring delight. I feel that Fall never gets its appropriate time and just "be" thus allowing us to enjoy it to it's fullest, if you get my drift (pardon the snow pun ;) ). Winter tends to bully Fall into submission far sooner then most of us are ready and would like. 

I have nothing against Winter, except the cold. I HATE being cold. I love sweaters, boots, hot tea and warm, comforting spices. Fall allows all of those things, without the incessant cold. I live in Canada, however, so the cold is inevitable. You'd think after 30 years I would be used to it, but no, I'm not. I imagine myself a snow bird when I hit retirement age. :D

The chilliness, however, brings me to this yummy recipe post! Due to the nature of the weather, I wanted to make something else that is comforting and perfect for a crisper day…soup. My husband found this delicious sounding recipe for Clam Chowder, in the Globe and Mail newspaper at work, so he brought it home for me to try out.



It was an exciting new endeavour, actually, and I found it a fun experience to purchase live clams for the first time.

First things first, when I bake or cook, I always need to get everything in order first. All my ingredients need to be out, and everything set up. Thus below I have my butter, pancetta, onions and potatoes all ready to go with my recipe :)


I melted the butter then added the pancetta first, to get it a little bit fried. Then you add the other ingredients and fry until the onions are translucent.


Then you add your vegetable stock and bring to a boil, then simmer until the potatoes are tender

Add fresh corn off the cob, stir together and then add your clams. Boil for about 3-5 minutes, until the shells have opened.

Remove the clams and set aside to let them cool (otherwise, you'll burn your fingers, as I found out :P)



Shell your clams and put the meat back into the soup. Add some salt if needed (I didn't need anything extra, but Hayden did, so I had him add salt to his own bowl of soup :))


Reheat your soup until the clams are heated through

Enjoy your delicious soup on a chilly day! I made my Gluten-Free Garlic Cheddar Muffins to go along with it, and it was a perfect accompaniment. This meal got two thumbs up from the hubby and he even went back for seconds. My wee one also got soup for supper and loved it. I spooned some into a cup and blended it in my magic bullet. She even had two helpings of supper! A hit all around :) I can't wait to eat the leftovers!


I adapted the original recipe by: Lucy Waverman from the Globe and Mail.
Ingredients:

2 Tbsp unsalted butter
1/2 cup diced pancetta
1 cup chopped onion
2 cups red potatoes, cut into 1/2 inch dice
3 stalks of organic chopped celery
Approx. 1/4-1/3 cup of chopped fresh basil
1 Tbsp chopped garlic
4 cups organic vegetable stock
3 cups fresh corn kernels (2-3 cobs)
2 lbs fresh, live clams (I used just under 2lbs and it was more then enough)
Salt

Directions:
- Melt butter over medium heat in a large pot.
- Add diced pancetta and saute' for 3 minutes or until slightly crispy.
- Add onions, potatoes, celery, garlic and basil, reduce heat and cook until onions are translucent, about 5 minutes.
- Add stock and bring to a boil.
- Simmer until potatoes are cooked, about 10-12 minutes.
- Add corn kernels and stir together.
- Add clams.
- Cover and boil about 3-5 minutes or until clams open.
- Remove clams, cool and shell them and return the clam meat to the soup.
- Salt if needed
- Reheat soup until clams are hot.

This was so simple and so delicious. I hope you enjoy it as much as we did.

Monday Feature: BigOak Baskets and Gifts

I've been most excited about writing on today's featured business, mainly because I was privileged to witness the humble beginnings of this unique business, BigOak Baskets and Gifts, and watch it grow from idea to dream to reality, and then jump to rising success! I was even blessed to be a part of her business launch, at which I won a most beautiful romantic date night gift basket that my husband and I enjoyed. BigOak has now been operating for just over one year and what an amazing year it's been for creator and owner, Christy Pick.


Christy is one of the most gifted, business-minded individuals I've honestly ever met. She has a way of visualizing where she wants to go with her business and how she's going to get there, making the plans and then taking action to see it all become reality. She's approachable, assertive, fun, super friendly, and so endearingly sweet. Christy's unique creations, in the form of the most creatively crafted baskets ever, are hard to resist. There is something for every personality and every occasion and each basket harnesses a specific theme, right down to the "basket" the goodies are resting in, whether it be for a wedding, anniversary (romantic date night), birthday, new job, retirement (golf anyone?) or even a pirate baby shower (yes, this last one was actually for my daughter's sweet, pirate baby shower, which was the coolest ever!).


Based out of Medicine Hat, Alberta, BigOak is sure to have something that you love, or rather, that you know someone else will love, because after all, that is the point of BigOak, to give someone else a thoughtful gift! With Christmas just around the corner, BigOak aims "to provide a unique gift giving experience, offering baskets that are as individual as the person you're surprising. And let's be completely honest here, we ALL have at least ONE person like that in our lives :D

Another unique aspect of BigOak, is that Christy, in turn, tries to purchase most of BigOak's products from local businesses and the local economy around Medicine Hat and Southern Alberta. Gotta love supporting local! :)

Like I had mentioned previously, BigOak just celebrated it's 1st birthday (Aug 28th), so this is a really new and thriving business. As Christy looks back she recalls, "I started the company because I love celebrating people and making them feel appreciated." This is so true of Christy. I, myself, have been on the receiving end of this side of Christy, and you do really feel appreciated and loved a thousand times over.

Christy continues… "I was looking for a new career path (I had been training and working in television and radio broadcasting for 10 years and decided the News Director life would not jive with a future-Mommy life, so we needed a new avenue to explore). My passion for giving gifts and excitement for meeting new people, eventually morphed into (what came very naturally) a home-based gift basket company that serves clients in Medicine Hat and Southeastern Alberta, as well as across Canada (and the U.S.)."

BigOak has cliental all over, including British Columbia, Manitoba, Ontario, and most recently, California! There are a few pre-designed gifts on BigOak's website, but 90% of it's business is in creating custom designed baskets and gifts, based on clients' needs.


"I love being a home-based business, because it opens the doors to so many opportunites. I can tailor the business any way I want and change my product line very quickly. I am not restricted by what I have in-store and I have the freedom to go TO my clients and meet them out in the community, rather than making them come to me. 

One of my favourite parts of this business venture is getting out and meeting people and seeing them in their own environments. If I had to manage a store all day, I'd be missing out on a lot of that. 

I also get to place my products in several other stores around town (ie. Madhatter Roastery, Pamper My Senses Wellness Day Spa, etc) so the exposure for BigOak is much farther reaching than I could do on my own."

At present, BigOak is a part-time occupation for Christy, while she is establishing her company. Her goal is to eventually have BigOak running full-time from her home, but until then, she continues to work steadily at getting BigOak's name out there and making the best connections possible in order to provide the best service to each of her clients.


You may wonder where Christy came up with the name BigOak for her blossoming company (no pun intended ;) ). Christy explains, "The meaning behind BigOak: I chose the name because when I think of a big oak tree, I think of a very long, storied history. I imagine a massive tree with weathered bark and strong, sturdy limbs which have thousands of stories to tell about the people who have sat under its leaves for some shade, or the folks who have passed by along their journey of life. And that's how I look at the gifts we create. I imagine there's a story behind each and every basket or gift ordered.
